Ingredients (enough for 4 portions)

  • 250 g low-fat quark or a vegan variant (e.g. Soya-SKYR)
  • 200 ml coconut milk
  • 40 g grated coconut
  • 1 tsp maple syrup
  • 1 small ripe mango
  • a handful of peanuts (unsalted)
  • Maple syrup + Inner Beauty to garnish

Preparation

  1. Blend Blend the low-fat quark, coconut milk, grated coconut and maple syrup until smooth.

  2. Divide the coconut quark between 4 dessert glasses.

  3. Peel the mango, cut it into small pieces and spread them over the quark portions. 

  4. Chill the jars while you roast the nuts with a little maple syrup in a small pan until the maple syrup caramelizes. 
  5. Garnish each glass with a few peanuts and top with a teaspoon of Inner Beauty . Mhhhhhhhhhhhhhh!
